I'm not sure I'm understanding you correctly, but if you are saying we should have a list somewhere of what colours are available to change your text into, I don't believe that's necessary - the software takes care of that! 
If you take a look at my screenshot below, the UI already gives a great sample of what colours you can choose for your text.
As you can see, once you click the tear drop, a selection of colours is displayed. And if the one you want isn't there, you can google the hex code for it! It seems to be a really handy tool.
